Characteristics:<\/span><\/p>\n

Crescent sweetlips (Koshodai) are distributed throughout Japan south of the Shimokita Peninsula in Aomori Prefecture except Okinawa, the South China Sea, Sri Lanka, and the Arabian Sea. It inhabits sandy bottom areas of coastal reefs and their margins. The body length is 40~60 cm. Its body color is blue-gray with three oblique black stripes and numerous small black spots from back to tail.<\/span><\/p>\n

Its white flesh has a distinctive flavor, but when the skin is seared, it adds a savory aroma that takes nigiri sushi to the next level. It has been a standard sushi topping in western Japan, but with global warming, the catch has increased, and it is now used in the Kanto region as well. Because of its high yield, nigiri sushi is especially popular at conveyor-belt sushi restaurants. Of course, it is also delicious grilled, boiled, or sashimi.<\/span><\/p>\n
