Characteristics:<\/span><\/p>\n

Brown sole (Magarei) is widely distributed north of central Honshu, the East China Sea, the Yellow Sea, the Bohai Sea, the eastern Korean Peninsula, the Kurile Islands, and the Kuril Islands. They inhabit sandy and muddy bottoms at depths of up to 100 meters. Females are larger, growing to a maximum length of nearly 50 cm. The eyed side is blackish brown with bluish tints, and the eyeless side is white. The season is winter.<\/span><\/p>\n

Magarei are clear, white-fleshed fish. Magarei has more flavor and sweetness than other flounder species and is recommended to be eaten as sashimi or in Japanese cuisine. It also does not become hard and tight when heated. It is also excellent grilled or salted, and one can enjoy the unique flavor of the skin and the refined taste of the flesh. It is also suitable for various other dishes such as simmered, dried overnight, meuniere, and fried.<\/span><\/p>\n
