It inhabits rocky reefs at depths of up to 100 meters. The body length is about 40 cm. Its body color is bright red, and its large scales are hard, with numerous small spines on their surface.<\/span><\/p>\n<p><span style=\"color: #000000;\">Japanese soldierfish (Ebisudai) has a rich and impactful flavor. It also has a pleasant aftertaste, making it suitable for nigiri sushi. However, because the scales are hard, they make the knife less sharp.
