Common Dolphifish (shiira) is widely distributed in temperate and tropical waters throughout the world. It is a migratory, pelagic surface fish. The body is laterally flattened, and the frontal area of adult males is protruding and angulate. The body length reaches 1.8 meters. The back is bluish yellow and the abdomen is pale yellow. They swim in schools of several to several hundred fish.<\/span><\/p>\n

It used to be disguised as Japanese amberjack (Buri) or Goldstriped amberjack (Hiramasa). This means it is tasty and cheap. Fresh ones are made into sashimi. Generally, it is filleted, marinated in miso, grilled in salted sake lees, teriyaki, baked in butter, or fried. One thing to keep in mind when cooking it is that the skin has epidermal mucus poison, so it must be treated properly with it.<\/span><\/p>\n
