The appearance of Short Barbeled Velvetchin (Higesoridai) nigiri<\/p><\/div>\n

Characteristics:<\/span><\/p>\n

Short-barbeled Velvetchin (Higesoridai) is distributed south of Aomori Prefecture and in the East China Sea. It inhabits sandy and muddy bottoms at depths of up to 90 meters. They are tall and strongly flattened. They reach a maximum length of 50 cm. Young fish have two blackish bands on the sides of their bodies, which become indistinct as adults. The chin has a mark on it that looks like a beard.<\/span><\/p>\n

Higesoridai are completely farmed in Arahama, Kashiwazaki City, Niigata Prefecture. Unlike its appearance, its skin is soft and can be made into Yakishimo-zukuri or Yubiki. It can also be cooked in simmered or sauteed dishes, as its flesh does not become tough.<\/span><\/p>\n
