In Edo period, the modern transportation system hadn\u2019t established yet and, moreover, there were no refrigerator or freezer. In these situations, fresh seafood gradually lost its freshness and quality. Accordingly, the solutions to preserve the seafood and condense more umami flavor than when it was raw through Sushi chef\u2019s works were developed.
