Hatsushimo

Hatsushimo is a type of Japanese rice. It is mainly produced in Gifu and Seino in the Mino region of Gifu Prefecture. It is popular as sushi rice in the Tokai and Kansai areas. The grains are large, slightly hard and elastic, and have low water absorption.
