Characteristics:

Silver gemfish (Minamikagokamasu) is distributed in New Zealand, southern and southeastern Australia, and Tasmania. It inhabits the continental shelf and its slopes in groups at depths of 100 to 400 meters. The length of the body is 60-90 cm.

Minamikagokamasu is caught by trawling and imported frozen round or dressed. It is a popular local food fish, and its stocks are declining due to overfishing. Its tender, fatty white flesh suits various dishes such as grilled, kasuzuke (marinated in sake lees), and meuniere. Locals especially like it smoked. It used to be called Ginsawara, a so-called substitute fish.
