Nigiri sushi detail: Aiburi (Blackbanded trevally) Nigiri sushi
Characteristics:
Aiburi (Blackbanded trevally) is found in the tropical and subtropical waters of the Indian Ocean and western Pacific Ocean, including southern Japan. It inhabits rocky reef areas off the continental shelf at depths of 20–150 meters. Although closely related to yellowtail and amberjack, it is the only species in the genus Aiburi. The body is uniformly glossy light brown with distinctive copper-colored stripes. It typically measures 40–50 cm in total length.
Aiburi is a rare member of the horse mackerel family in that it does not form schools and is not caught in large quantities. As a result, it is not commonly found in supermarkets and is considered a rare fish for consumers. Its flesh is tender and mild, making it suitable for various dishes. Sashimi and simmered dishes are recommended. However, due to its low bloodline (Chiai), the rich flavor typical of blueback fish is not as pronounced. It is also suitable for nigiri sushi.
