Hakuinmasamune Homarefuji Junmaishu

Takashima brewing Incorporated company is located in Numazu City, Shizuoka Prefecture. The brewery has a long history, having been established in 1804. Mount Fuji, the melted snow water has a low hardness and softness that gives a pleasant flavor to sake brewing. Such water is pumped up from 150 meters underground, and the brewery aims to create sake that is easy to drink.

Hakuinmasamune Homarefuji Junmaishu is brewed by master brewer Kazutaka Takashima using Homarefuji sake rice from Shizuoka Prefecture, Shizuoka New-5 yeast, and melted snow water from Mount Fuji.

It is a drink with dinner with a clear, crisp taste and a strong sense of rice umami that is typical of Junmaishu. This sake is different from the “easy to drink like wine” and “fruity” sakes that are popular these days. It is an indispensable sake for Japanese cuisine.
