Characteristics:

Sagochi is a young Japanese Spanish mackerel (Sawara).

Sawara is a large fish reaching 1 meter in length and is known as a Shusseuo that changes its name as it grows. In the Kanto region, fish up to about 50 cm in length are called Sagochi. In the Kansai region, a fish smaller than 50 cm is called Sagoshi.

While adult Sawara is a high-end fish, Sagochi is reasonably priced and is perfect for sashimi and grilled dishes such as Saikyo-yaki and Yugen-yaki.
