Big roughy (Hashikinme)

Big roughy (Hashikinme) is distributed in the Pacific Ocean off the coast of Japan. It is a deep-sea fish that lives in the middle and bottom layers of the sea, at depths of 100 to 600 meters. Its body is shaped like a sea bream. It is 20 to 30 centimeters long. Its body is grayish brown tinged with red, and its mouth and gill cavities are black.

Hashikinme is a rare fish that is not often seen on the market. It has a surprisingly firm texture and is delicious. It is a white fish with a slight reddish tinge, and is used in dishes such as simmered dishes, grilled with salt, and sashimi. It is cheaper to obtain than the Splendid alfonsino (Kinmedai).
