Characteristics:

Brickred rockfish (Baramenuke) is distributed along the Pacific coast from Chiba Prefecture to the southern Kurile Islands. It mainly inhabits the deep sea at depths of 100 to 400 meters. It is the tallest and thickest of the Menuke group. The total length is about 40 cm. The body is red with three dark brown transverse stripes on the top of the head.

Baramenuke has white flesh without any peculiarities and is rich in sweet, mellow fat, making it suitable for any cuisine, including sashimi, simmered, fried, baked in butter, misozuke (marinated in miso), and kasuzuke (marinated in sake lees). In Hokkaido, where Red seabream is scarce, it is served at celebratory meals or offered before the gods as a substitute for Red seabream.
