Feature:

Russel’s snapper (Kurohoshifuedai) is distributed along the coast of southern Japan and in the Indo-West Pacific region. It is found in coral reefs and rocky reefs at depths shallower than 80 m. It lives alone or in small groups. It is tall and oval. Adults have a large black patch on the back of their slightly reddish body. The length of the fish ranges from 30 to 45 cm, reaching a maximum of 60 cm.

Kurohoshifuedai is rarely caught and has been a very scarce fish in general circulation, but it is now being seen in markets in the Kanto region.

Kurohoshifuedai’s white flesh has no peculiarities and can be used in a variety of dishes. It is also very well matched with oil and is used in Western cuisine. The fish is also quite tasty as sashimi.
