Characteristics:

Stripey (Kagokakidai) is distributed south of Ibaraki Prefecture, Taiwan, Hawaii, and Australia. It inhabits coastal coral reef areas. The body length is about 20 cm. The body is nearly elliptic and strongly lateralized. The body has a pale yellow background with five bright black longitudinal bands.

Kagokakidai is mainly considered an ornamental species because of its bright body color and robust nature. It has a good taste, but the edible portion is small. The blood is bright red and the flesh is transparent. It was served at a two-star Michelin restaurant in Ginza, so there is no doubt about its taste.

The job of a sushi chef is to take small, difficult fish and transform it into delicious nigiri sushi.
