Characteristics:
Yellowstriped ruby snapper (Hachijoakamutsu) is distributed in southern Japan and the Indo-Pacific region. It inhabits the reefs of deep waters, more than 200 meters deep. It is spindle-shaped, similar to the closely related Hamadai (Deepwater longtail red snapper). Its body color is a bright red with a slight yellowish tinge. The length of the body exceeds 80 cm. Although it has Akamutsu in its name, it is a completely different species from the Blackthroat seaperch (Akamutsu) and belongs to the snapper family.
Hachijoakamutsu has no peculiar taste or odor, and is moderately fatty and very elegant. It has a beautiful flesh similar to that of Hamadai, and is suitable for sashimi, nigiri sushi, grilled with salt, and soup. Its skin is a little tough, so if you want to eat sashimi with the skin, you should use kawashimo-zukuri.
