What is Shinko?
Shinko is referred to as baby fish with the size of 10cm or smaller. The first catch of fish are purchased at an inflated price since every sushi chef seek this ingredient. Normally several fish are placed atop sushi due to its smaller size. Its relatively low content of fat offers plain and fine taste and many sushi fan look forward to its season.
