Characteristics:

Leopard coral grouper (Sujiara) is distributed in southern Japan, the western Pacific, and Western Australia. It inhabits the outer edges of coral reefs and shallow reef areas. The body length is 50~60 cm. Its body color is bright red with numerous small blue spots. In Okinawa, it is better known by its dialect name, Akajin.

It is said that it makes a good soup stock when cooked in a bowl. The surface skin is gelatinous and soft, with a moderate texture, and spreads sweetness and umami in the mouth. It is a high-class white fish and goes well with sushi rice.
