Characteristics:

Emperor red snapper (Sennendai) is distributed in warm waters of southern Japan and the Indo-West Pacific region. It inhabits coral reefs and surrounding reefs. The length of the body is 50~60 cm, reaching up to 1 meter. Older adults are red in color, and are named Sennen (Sennen means 1000 years) dai because they are only caught once every 1,000 years.

Its dark red meat (chiai) is so bright red that the fat seems to ooze out onto the surface of the cut meat. This fat is sweet and goes well with sushi rice, and when served with nigiri sushi, it gives the fish a rich umami taste.
