What is Inada?
Inada (Young amberjack) is one of the names for a growth phase of Buri (Yellowtail), referring to a juvenile fish of about 30 cm in length. It has almost no fat compared to Buri. However, that means it is refreshingly perfect for the summer season. While Kan-buri tastes best when it comes from certain regions, the taste of Inada doesn’t change much based on location. There is also a high yield delivered to the markets so the price is low. It might feel like it’s missing something to someone who is used to eating farmed Hamachi, but it’s appreciated for the robust umami and subtle acidity. Inada is actually preferred to Buri in Kansai. It is also a topping loved by Jiro Ono.
