Simmered Japanese conger is cut into thin strips and rolled with a combination of cucumbers.Usually, grilled or simmered conger eel is used as the filling. The flavor of the conger eel and the refreshing taste of the cucumber harmonize well with the sourness of the vinegared rice. Incidentally, grilled conger eel is preferred in the Kansai region, while simmered conger eel is preferred in the Kanto region.
