Cod testes is an ingredient that becomes more delicious the colder it gets, and is called madachi. Fresh testes have a clear, milky white color. When chewed, it leaves a small elasticity and melts in the mouth, giving it a texture similar to that of fresh cream. It has a dense richness and no odor at all.
