Minke whales and other baleen whales have a mild flavor and are suitable for eating raw. The Bryde's whale, also a baleen whale, is central to whale meat distribution in Japan due to its catch numbers, body size, and the amount of meat obtained.

The difference from minke whales is that Bryde's whales yield the highest-grade cut, the onomi. Onomi refers to the dorsal section from the dorsal fin to the base of the tail. It is rich in fat and marbled, resembling the fatty tuna belly (otoro). At Toyosu Market, it can fetch several hundred dollars per kilogram.

This nigiri sushi gives no hint that it is animal meat. In Tokyo, it is currently offered at only a handful of sushi restaurants.
