Golden threadfin bream (Itoyoridai)

【Nigiri sushi: Shiromi】
Although the golden threadfin bream (Itoyoridai) is not commonly found in the Kanto region, it is highly prized as a luxury fish in the Kansai region. Larger ones, in particular, are considered especially flavorful.

When preparing this fish, it is important to handle it gently and carefully to avoid damaging the flesh while scaling it, as its bones are thick and hard while its flesh is tender. It is also essential to remove all the small, sharp bones without leaving any behind. Itoyoridai has beautiful skin, and because the layer just beneath it has a distinctive flavor, the fish is commonly prepared with the skin left on.

The flesh is mild and delicate, with a subtle sweetness and a characteristic umami richness. At the same time, because its flesh is moist and tender, it is often seared or cured with kombu. Used in both Chinese and French cuisine, Itoyoridai can reveal different qualities depending on how it is prepared, making it a fish that showcases the skill of a sushi chef.
