【Nigiri sushi: Shiromi】
Sevenband grouper (Mahata) is a fish caught in relatively small quantities, and much of its ecology remains unknown. Fishermen primarily catch it using hook-and-line fishing and bottom trawling. However, no fisheries are known to target mahata exclusively; it is generally caught alongside other fish species.
Mahata is considered a high-end fish, prized for its firm white flesh and rich umami flavor. Larger specimens generally have more fat and a more pronounced flavor. Although summer is considered its peak season, its flavor varies relatively little throughout the year, making it a fish that can be enjoyed in any season.
When prepared as sashimi or sushi, mahata is typically aged for several days. In my opinion, sushi chefs who are familiar with mahata tend to age it for longer periods. Its flesh has a very pale pink hue and a lustrous sheen. It has no pronounced fishy or unpleasant flavors. When placed in the mouth, it releases a subtle sweetness, accompanied by a rich, velvety texture. It pairs well with vinegared rice, while salt, citrus, or ponzu sauce offers a different way to appreciate the umami of its fat. However, mahata rarely appears in the display cases of even high-end sushi restaurants, making it a fish worth trying if you ever have the opportunity.
Another member of the grouper family is ara, a large fish prized for its high-quality white flesh. However, Japanese fish names vary by region. In the Kansai region, groupers such as mahata and kue are sometimes referred to as “ara.” This regional usage should be distinguished from ara, the fish's standard Japanese name. Standard-name ara is considered to be in season during winter, unlike mahata, whose peak season is summer.
【What is Mahata】
Mahata is distributed from southern Hokkaido to the East China Sea, excluding the Ryukyu Islands. It inhabits shallow to deep reef areas along the coast. The larger the size, the deeper the habitat. Its length exceeds 1 meter. Natural Mahata is rarely seen in the Toyosu market, and a rare large one can cost more than US$200. Although aquaculture has become popular, the price is still high.
【Nutrition and Effects of Mahata】
This fish contains high levels of glutamate, aspartic acid, alanine, leucine and other amino acids that are known as umami components, and are the source of this fish’s deliciousness. If Hata sashimi is matured for two to three days, the umami condenses, giving it a good flavor. This happens because of the mechanism of the amino acids mentioned above, which brings out the umami.
