Ark shell mantle (Akagai himo) is a rare cut, with only one piece obtained from each ark shell. Himokyu maki is a thin sushi roll made by wrapping vinegared rice and nori around a core of akagai himo and cucumber. Akagai himo has a stronger ocean aroma and the characteristic faint astringency of ark shell than the meat itself, and many people actually prefer it. Its crunchy texture and rich umami are complemented by the refreshing flavor and crisp texture of the cucumber, creating a perfect harmony.
