【Nigiri sushi: Shiromi or Iromono
Greater amberjack (kanpachi) is a premium fish comparable in quality to its close relatives, Japanese amberjack (buri) and yellowtail amberjack (hiramasa). The pattern of its bloodline and the beauty of its silvery skin give it a slightly more refined appearance than buri. While hiramasa is widely consumed in the Kansai region, kanpachi is particularly popular in Tokyo.

Although its flavor remains consistent year-round, wild kanpachi is considered to be in season during the summer. A crisp, snappy texture characterizes its pale pink flesh, and the rich, umami-filled fat that spreads throughout the mouth with each bite has a refreshing sweetness. Because kanpachi has a firm, resilient texture, it is generally sliced slightly thinner when used as a sushi topping. Rather than being served immediately after being caught, kanpachi develops a deeper and more complex flavor when aged for an appropriate period, which enhances its umami components.

Although adult kanpachi can grow to around 1 meter in length, fish weighing approximately 2 to 3 kg are considered the most suitable size for sushi. In addition, juvenile kanpachi measuring about 20 to 30 cm are called “shiokko,” and this size is also highly prized by sushi chefs.

While farmed kanpachi is widely available today, wild kanpachi caught during its season is something you should definitely try if you have the opportunity. In addition, advances in aquaculture technology—including improvements in feed, pre-harvest fasting, and distribution methods—have significantly enhanced the quality of farmed kanpachi.

【Trivia】
Large Greater Amberjack (Kanpachi) are not suitable for sushi. The best size is about 80 cm long, weighing 4 to 5 kg. The fat content of Greater Amberjack is 8.1% per 100 g, which is about half that of the Japanese amberjack (Buri), which is 17.6%, so it’s much more refreshing than the Japanese amberjack.
